Strip away the coating and the B-500 design shows its bones: a curved blade of heat-treated Japanese stainless on a soft orange grip. No fluorine layer sits on this edge, which is the one thing separating it from its coated sibling. The blade is 35 mm long on a frame of 155 mm, small enough to work bud by bud with two fingers and a thumb. Its curve rides the outside of a flower, so sugar leaf comes off close without the point digging into the calyx. Chikamasa grinds the outer face of each blade round.
